Wild Irish Venison – Natural Seasonal Changes

We use wild Irish venison and the supply is governed by seasonal licensing. This means that we can only use male deer at certain times of year. One of these periods is early spring, a period when the stags are also in rut. This brings a slightly musky aroma to the venison recipe – the nutrients are exactly the same, but this scent is more prominent. It will begin to reduce again in May and by June, have gone.
